Hunter’s Garden Gazpacho

1 cucumber, roughly chopped
3 beefsteak tomatoes, quartered
½ red onion, chopped
1 red bell pepper, chopped
1 cloves garlic
3 cups tomato juice
¼ cup red wine vinegar
¼ cup olive oil
Salt
Pepper
- In a food processor, combine all vegetables and garlic and puree until smooth
- Add tomato juice and vinegar
- Slowly add olive oil on low speed, and taste.
- Add salt and pepper accordingly
